Chicken Salad

I make one that is really simple...
I just boil chicken and shred or cut it into pieces and then mix in half miracle whip, half mayo with some fresh squeeze of lemon, craisins, celery, and almond slivers and I also add some seasoning to taste(paparika, season salt, etc). Then I put it on croissants.

Hey! Congrats on the new one in june! Having 2 is great! I make chicken salad all the time. Its a great way to get my kids to eat veggies :) I dont really have a specific recipe but I can tell you what I usually do.
1 can chicken (usally from sams club cause they are bigger)
mayo (2 spoonfuls) 1 squeeze of mustard 2 big spoonfuls of pickle relish, (1/2 cucumber, handful of crasins, sugar snap peas cut up, 2 string cheeses cut up, slivered almonds, grapes, apples) sprinkle garlic powder, salt and pepper on top. sometimes I sprinkle curry on top (it adds a good flavor). The stuff in the parentheses changes depending on what I have in the fridge. I just make sure there is something crunchy in there (cucumber,peas,almonds,etc) At first I thought the pickle relish would be weird, but I add that every time. Great with crackers, as a sandwich or my kids love if I add it to leftover noodles. Good luck! We eat this at least once a week!
